Weekday Superhero Salad

Women are modern-day superheroes. We lead, heal, build, nurture, create and carry more than most people ever see. And like any superhero, we need the right fuel in our toolkit — not complicated, exhausting recipes, but simple, vibrant meals that come together quickly and nourish us deeply.

These are the kind of meals that steady blood sugar, support heart health, build strength and keep energy consistent through long days of caring for everyone else. Because when women are well-fed — with real protein, colorful vegetables, healthy fats, and fiber — we’re clearer, calmer, and more powerful.

Bonus points for this recipe if you happen to have a Trader Joe’s nearby; nearly every part of this meal can be found in the produce aisle and thrown together QUICKLY!

Salad Ingredients:

  • 2 cups prepared quinoa (1 cup dry), or sub any grain you have prepared (pre-frozen rice, farro, barley,etc.)
  • 2-3 cups prepared chopped or pulled chicken (can be from a Rotisserie Chicken, Trader Joe’s pre-cooked chicken breasts, or fridge leftovers)
  • 1 bag shredded coleslaw mix
  • 1-2 cups shelled edamame
  • 1 cup diced persian cucumber
  • ½ cup diced red pepper
  • ⅓ cup nuts or seeds (try cashew, pistachio or pumpkin seeds)
  • 1 small bunch green onions, sliced (light green and white parts only)

Dressing Ingredients

  • 4 tablespoons Tamari Sauce (soy sauce is ok if you’re not limiting gluten)
  • 2 tablespoons vinegar (Apple Cider, Rice Wine or white wine all work here)
  • ½ tablespoon honey
  • Juice of 1 lime
  • 1 Tablespoon of chili paste or oil (optional for more heat)

Directions:

  1. Combine all salad ingredients in a large bowl.
  2. Add dressing and mix well
  3. Enjoy!

This salad keeps well in the refrigerator for a few days, thanks to the heft of the coleslaw. Feel free to sub or swap any ingredients that you have on hand.
