A refreshing summer salad featuring several MIND diet “superstars” in one bowl.
Ingredients (4 servings)
5 oz. fresh spinach or mixed leafy greens
1 cup fresh blueberries
1/2 cup sliced strawberries
1/2 cup chopped walnuts
1/4 cup crumbled feta cheese or goat cheese (optional)
1/4 small red onion, thinly sliced
Dressing
3 tbsp. extra-virgin olive oil
1 tbsp. balsamic vinegar
1 tsp. Dijon mustard
Freshly ground black pepper to taste
Directions
Combine spinach, berries, walnuts and red onion in a large bowl.
Whisk together dressing ingredients.
Toss salad with dressing just before serving.
Sprinkle lightly with cheese if desired.
