Berry, Spinach & Walnut Summer Salad

A refreshing summer salad featuring several MIND diet “superstars” in one bowl.

Ingredients (4 servings)

  • 5 oz. fresh spinach or mixed leafy greens
  • 1 cup fresh blueberries
  • 1/2 cup sliced strawberries
  • 1/2 cup chopped walnuts
  • 1/4 cup crumbled feta cheese or goat cheese (optional)
  • 1/4 small red onion, thinly sliced

 

Dressing

  • 3 tbsp. extra-virgin olive oil
  • 1 tbsp. balsamic vinegar
  • 1 tsp. Dijon mustard
  • Freshly ground black pepper to taste

 

Directions

  1. Combine spinach, berries, walnuts and red onion in a large bowl.
  2. Whisk together dressing ingredients.
  3. Toss salad with dressing just before serving.
  4. Sprinkle lightly with cheese if desired.
