Freezer Meal Chicken Fajitas

Ingredients 

  • 2 pounds boneless skinless chicken breasts (about 4 chicken breasts), cut into thin slices
  • 1 medium red or yellow onion thinly sliced
  • Juice of one lime
  • 3 large bell peppers (any color will work)
  • 1 tablespoon olive oil

For the fajita seasoning mix:

  • 3 teaspoons chili powder
  • 2 teaspoons garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon each salt and black pepper

Directions

  1. In a large bowl, combine the seasoning mix, olive oil and lime juice to make your marinade.
  2. Toss the sliced chicken in the marinade until evenly coated.
  3. Add in the peppers and onions
  4. Add the chicken mixture to a gallon sized zip bag. Seal the bag, removing as much air as possible, and flatten the bag for storage.
  5. The day before you’d like to cook the fajitas, remove from freezer to thaw slowly in the refrigerator.

When You’re Ready to Cook:

 

 

  1. Dump the chicken and vegetables into a slow cooker. Cook on low for 6-8 hours or on high for 3-4 hours.
  2. Serve with tortillas or rice and all the fun toppings! Think salsa, guacamole, avocado, pickled red onions, sour cream and fresh cilantro.
