5-Ingredient Italian Stuffed Peppers

Serves 4-6

This zippy weeknight dinner is perfect to prep ahead or throw together in the moment. It’s great to have this prepped and then pop it into the oven when you’re ready to eat. Five ingredients? Say no more!

Ingredients:

  • 3 large bell peppers (any color)
  • 3 pre-cooked chicken or turkey sausages (we like the Aidell’s brand)
  • 3 cups cooked brown rice or cooked quinoa (can swap out 1 cup of rice/quinoa for riced cauliflower if desired)
  • 2 cups marinara sauce
  • 6 tablespoons grated parmesan cheese

Directions

  1. Preheat oven to 400°F.
  2. Rinse bell peppers.
  3. Spray 9×12 baking dish with cooking spray.
  4. Cut peppers in half and place in baking dish, cut side up. Set aside.
  5. Chop the 3 sausages and saute in a pan over medium-high heat until lightly browned. Turn off heat. Add marinara sauce and cooked rice to the pan.
  6. Stir and scoop evenly into the 6 pepper halves. Load them up and top with 1 tablespoon grated parmesan cheese.
  7. Bake uncovered in oven at 400°F for 25 minutes.
