Fresh Strawberry Salad with Balsamic Vinaigrette

This vibrant strawberry salad is a celebration of fresh, seasonal ingredients. Juicy strawberries pair beautifully with creamy goat cheese, crunchy pecans and a tangy homemade balsamic vinaigrette. Perfect as a light lunch or a side for grilled chicken or salmon.

Salad Ingredients

  • 5 oz. spring mix or baby spinach 
  • 1 cup sliced fresh strawberries 
  • ¼ small red onion, thinly sliced 
  • ¼ cup crumbled goat cheese (optional) 
  • ¼ cup chopped pecans (or walnuts), toasted 
  • Balsamic vinaigrette (see recipe below) 

 

Directions 

  1. Assemble the salad: In a large bowl or platter, combine greens, sliced strawberries and red onion. 
  2. Add toppings: Sprinkle with crumbled goat cheese and toasted pecans. 
  3. Dress it up: Drizzle with balsamic vinaigrette just before serving. Toss gently to combine or serve the dressing on the side. 

 

Homemade Balsamic Vinaigrette 

This simple, zesty vinaigrette comes together in minutes and elevates any salad. 

 

Ingredients (Makes ~1/2 cup) 

  • ¼ cup balsamic vinegar 
  • 2 teaspoons Dijon mustard 
  • ½-1 teaspoon honey 
  • 1 small garlic clove, minced 
  • ¼ teaspoon sea salt 
  • ¼ teaspoon ground black pepper 
  • ⅓ cup extra virgin olive oil
